Saffron Barley

  Serves 4
2 cups pearled barley
Water
Swanson’s vegetable broth  
Wash the barley and examine for stones. Select a medium saucepan, add the barley, cover with 2 inches of water. Bring to a boil, then drain the water.  

Cover the barley with 2 inches of vegetable broth. 
~ 1/2 gram saffron threads  Place the saffron in a small plastic bag and rub it between your fingers to grind. Add the saffron to the barley.

Turn the heat to low and simmer for about 40 minutes until tender. Add broth as needed to keep the level near the top of the barley.  
 The barley is an excellent side dish for fish or poultry.   Saffron barley is a hearty addition to chicken soup or vegetable soup.  

Saffron is available at Trader Joe’s or Costco. I use the full jar of Trader Joe’s (0.7g) or half the jar of Costco Saffron.
